What do I do with all this turkey?

One of my favorite things about Thanksgiving is the leftovers! But what do you do with all that turkey once you run out of stuffing, mashed potatoes, and rolls? Here's a recipe we tried out last night (not with Thanksgiving leftovers of course) that we LOVED!

Spicy turkey Stir-Fry
(from Taste of Home's Light And Tasty - 2004)

1 Tbsp cornstarch
1 Tbsp sugar
1 cup reduced sodium chicken broth
1/4 C reduced sodium soy sauce
2 Tbsp cider vinager
1/4 tsp cayenne pepper
3 C fresh broccoli florets
2 Tbsp water
1 lb turkey cut into 3/4 in pieces
2 tsp oil
1 sweet red pepper, cut into 3/4 in pieces
1 garlic clove, minced
1/4 tsp ground ginger
2 green onions, sliced
2 Tbsp dry roasted peanuts
cooked rice

Combine the first 6 ingredients until smooth, set aside. Place broccoli and water in microwave safe bowl; cover and cook on high for 2-3 minutes. Drain and set aside.

In a nonstick skillet coated with nonstick cooking pray, stir-fry turkey in hot oil for 2-3 minutes. Add sweet pepper, garlic, ginger, and broccoli; stir-fry for 3-4 minutes or until vegetables are crisp-tender. Stir broth mixture; add to pan. Bring to a boil; cook and stir for 2 minutes or unil thickened. Sprinkle with onions and peanuts. Serve with rice.

Yield: 4 servings
